Ingredients
  

  • 1 piece store-bought or homemade shortcrust pastry (pâte brisée)
  • 4 pieces juicy apples (like Granny Smith or Honeycrisp)
  • 50 g butter
  • 100 g sugar
  • 1 piece egg
  • to taste cinnamon powder for flavor

  • Rolling pin
  • Sharp knife or mandoline
  • Mixing bowl and whisk

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. Lightly flour your work surface and rolling pin, then roll out the pastry into a circle slightly larger than the tart pan.
  3. Transfer the pastry to the pan, pressing it into the edges and pricking holes all over the base to dock it.
  4. Peel and slice the apples into thin, even pieces and arrange them in a spiral in the tart shell, overlapping each slice.
  5. In a small bowl, whisk the egg, sugar, and cinnamon until smooth, then pour it evenly over the apple slices.
  6. Cut the cold butter into small pieces and scatter them over the tart.
  7. Bake in the preheated oven for 30-35 minutes until the crust is golden brown and the apples are bubbling.
