- Preheat your oven to 180°C (350°F).
- In a large bowl, mix the Dijon mustard, honey, olive oil, salt, and pepper. Add the crushed garlic cloves.
- Coat the turkey thighs generously with the marinade.
- Place the coated turkey thighs in a baking dish and tuck the bouquet garni around them.
- Bake for about 1 hour, basting the turkey with pan juices every 20 minutes.
- Let the turkey rest for a few minutes before serving.
