  • 2 large eggs
  • 200 ml milk
  • 1 pinch salt
  • 2 tablespoons melted butter plus extra for cooking
  • 4 slices ham
  • 100 g grated cheese (like Emmental or cheddar)

Method
 

  1. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  2. Crack in the eggs and pour in the milk; whisk until smooth with no lumps.
  3. Stir in the melted butter and let the batter sit for 5 minutes.
  4. Heat a non-stick skillet or griddle over medium heat and add a knob of butter.
  5. Pour a ladleful of batter onto the skillet and cook until bubbles form and edges set.
  6. Flip the pancake and cook for another minute until golden brown.
  7. Add a slice of ham and sprinkle cheese over half of the pancake.
  8. Fold the pancake or place a second pancake on top, and cook for another minute.
  9. Serve immediately while hot.
