Ingredients
  

  • 200 g all-purpose flour
  • 100 g unsalted butter softened
  • 80 g Parmesan cheese freshly grated
  • 1 large egg
  • 1 tsp baking powder
  • to taste salt
  • to taste black pepper freshly ground
  • 50 g walnut pieces roughly chopped
  • 60 g halal beef chorizo finely diced

Method
 

  1. Preheat your oven to 320°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, sift the flour and baking powder, then add a pinch of salt and black pepper. Stir in the grated Parmesan.
  3. Cut the softened butter into small cubes and rub it into the dry mixture until it resembles fine breadcrumbs.
  4. Crack the egg into a small bowl, whisk gently, and then pour it into the breadcrumb mixture, mixing gently until a soft dough forms.
  5. Fold in the finely diced halal chorizo and chopped walnuts.
  6. Divide the dough into small portions (about 30g each), roll them into balls, and place them on the prepared baking tray, flattening each slightly.
  7. Bake in the oven for 18–20 minutes until golden around the edges and pale in the center.
