- Preheat your oven to 320°F (160°C) and line a baking sheet with parchment paper.
- In a large bowl, sift the flour and baking powder, then add a pinch of salt and black pepper. Stir in the grated Parmesan.
- Cut the softened butter into small cubes and rub it into the dry mixture until it resembles fine breadcrumbs.
- Crack the egg into a small bowl, whisk gently, and then pour it into the breadcrumb mixture, mixing gently until a soft dough forms.
- Fold in the finely diced halal chorizo and chopped walnuts.
- Divide the dough into small portions (about 30g each), roll them into balls, and place them on the prepared baking tray, flattening each slightly.
- Bake in the oven for 18–20 minutes until golden around the edges and pale in the center.

Notes
Toasting the walnuts enhances their flavor—just a few minutes in a skillet will do. Store in an airtight container at room temperature for up to 3 days or freeze for longer storage. Reheat in the oven for a few minutes to restore crispness. For best results, grate your own Parmesan for maximum flavor; experiment with spices like paprika or cumin for a unique twist.
