- In a large skillet, melt the butter over medium heat. Add the finely chopped onion and minced garlic, sautéing until translucent and fragrant.
- Add the sliced mushrooms to the skillet and cook for about 5 minutes until golden brown and tender.
- Next, add the peeled shrimp and scallops to the skillet. Cook for 3-4 minutes until just cooked through.
- Pour in the heavy cream, lemon juice, salt, and pepper. Stir gently to combine all ingredients and allow the sauce to thicken slightly.
- Divide the seafood mixture among individual cassolettes or a large baking dish. Sprinkle shredded cheese evenly over the top.
- Preheat your oven to 200°C (about 400°F). Place the cassolettes in the oven and bake for 10-15 minutes until the cheese is bubbly and lightly golden.
- Remove from oven, let cool slightly, and garnish with chopped parsley. Serve hot.

Notes
For a lighter version, substitute heavy cream with half-and-half or Greek yogurt mixed with milk. Feel free to get creative with seafood choices; lobster or langoustines can be great substitutes for shrimp.
