Ingredients
  

  • 12 oz linguine
  • 1 lb mussels, cleaned and debearded
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1/2 cup fresh parsley, chopped
  • 1/4 tsp red pepper flakes (optional)
  • to taste salt and pepper
  • 1 Juice of lemon

Method
 

  1. In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add shrimp and cook until they turn pink and opaque, about 3-4 minutes.
  4. Stir in the cleaned mussels and cook for an additional 2-3 minutes until they start to open. Discard any mussels that do not open.
  5. Add the drained diced tomatoes and red pepper flakes if using to the skillet. Season with salt, pepper, and lemon juice. Mix well and let simmer for 2 minutes.
  6. Toss the cooked linguine into the skillet with the seafood mixture, ensuring the pasta is well-coated.
  7. Stir in the chopped parsley before serving. Plate the seafood pasta, garnishing with additional parsley and a squeeze of lemon if desired.
