- Take the lamb chops out of the refrigerator about 30-45 minutes before cooking to let them come to room temperature. Pat each lamb chop dry and season generously with coarse salt and black pepper on both sides.
- Preheat a cast iron skillet over medium to medium-high heat. Add the olive oil and let it get nice and hot.
- Place the lamb chops into the preheated skillet and sear for 3-5 minutes on one side until golden brown. Flip and cook for another 3-5 minutes while adding the butter, minced garlic, and thyme to the skillet.
- Baste each lamb chop with the hot garlic butter using a spoon. Check the internal temperature; remove from the skillet when done.
- Place the lamb chops in a serving dish and tent with foil. Let rest for about 10 minutes. Spoon the buttery mixture from the pan over the lamb chops when serving.
