Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 can (14 oz) beef broth
  • 4 cups mashed potatoes, prepared
  • to taste salt and pepper
  • 1/4 cup butter (optional, for mashed potatoes)
  • 1 cup shredded cheddar cheese (optional, for topping)

  • Potato masher or ricer

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the chopped onion until translucent. Add minced garlic and cook for another minute.
  3. Add ground beef to the skillet and cook until browned. Drain any excess fat.
  4. Stir in mixed vegetables and beef broth. Season with salt and pepper, and simmer for about 5-7 minutes.
  5. In a greased 9x13 inch baking dish, spread the beef and vegetable mixture evenly on the bottom.
  6. Spread the prepared mashed potatoes over the beef mixture. Optionally, dot the top with butter and sprinkle shredded cheese.
  7. Bake in the preheated oven for 25-30 minutes, until the top is golden and the casserole is heated through.
  8. Let cool for a few minutes before serving.
