- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, cook the chopped onion until translucent. Add minced garlic and cook for another minute.
- Add ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in mixed vegetables and beef broth. Season with salt and pepper, and simmer for about 5-7 minutes.
- In a greased 9x13 inch baking dish, spread the beef and vegetable mixture evenly on the bottom.
- Spread the prepared mashed potatoes over the beef mixture. Optionally, dot the top with butter and sprinkle shredded cheese.
- Bake in the preheated oven for 25-30 minutes, until the top is golden and the casserole is heated through.
- Let cool for a few minutes before serving.
