Ingredients
  

  • 1 lb sirloin or ribeye steak, cut into bite-sized cubes
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 8 cloves garlic, minced
  • q.s. Salt and black pepper, to taste
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme or rosemary (optional) optional
  • 12 oz spaghetti
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 tsp red pepper flakes (optional) optional
  • q.s. Fresh parsley, chopped for garnish

  • Large skillet
  • Sharp knife and cutting board
  • Tongs
  • Wooden spoon

Method
 

  1. Fill a large pot with salted water and bring to a boil; cook spaghetti according to package directions for 'al dente'.
  2. Pat steak cubes dry with a paper towel; season with salt, pepper, and smoked paprika.
  3. Heat olive oil in a large skillet; sear steak cubes in batches for 2-3 minutes per side until golden brown; remove and let rest.
  4. Reduce heat; add butter and minced garlic to skillet; cook until fragrant, then pour over steak.
  5. In the same skillet, melt 2 tbsp butter and add minced garlic; cook one minute, then slowly pour in cream.
  6. Stir in Parmesan and mozzarella cheese until melted and smooth; season with salt, pepper, and optional red pepper flakes.
  7. Drain spaghetti and add to the sauce; toss to coat and combine.
  8. Serve spaghetti topped with steak bites and garnish with parsley.
