Ingredients
  

  • 1 pound boneless skinless chicken breasts or thighs
  • 8 ounces egg noodles frozen, dry, or homemade
  • 4 cups chicken broth
  • 1 cup heavy cream optional for extra creaminess
  • 1 medium onion diced
  • 2 medium carrots sliced
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • to taste Salt and pepper

Method
 

  1. Chop the onions, carrots, and celery, then mince the garlic.
  2. Place the chicken at the bottom of the slow cooker.
  3. Add the chopped veggies on top of the chicken.
  4. Sprinkle with garlic, thyme, salt, and pepper.
  5. Pour in the chicken broth until ingredients are mostly covered.
  6. Cover and set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  7. About 30 minutes before serving, stir in the egg noodles.
  8. If desired, stir in heavy cream during the last 15 minutes of cooking.
