- Chop the onions, carrots, and celery, then mince the garlic.
- Place the chicken at the bottom of the slow cooker.
- Add the chopped veggies on top of the chicken.
- Sprinkle with garlic, thyme, salt, and pepper.
- Pour in the chicken broth until ingredients are mostly covered.
- Cover and set the slow cooker to low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the egg noodles.
- If desired, stir in heavy cream during the last 15 minutes of cooking.
