- Spread a generous layer of Boursin cheese on one side of each slice of bread.
- Lay a piece of smoked salmon on two of the cheese-covered slices.
- Place a slice of melting cheese on top of the salmon.
- Cover each prepared slice with another piece of bread, cheese-side down, and press gently to seal.
- Heat a skillet over medium heat, add butter, and place sandwiches in the pan.
- Cook for 2-3 minutes on each side, or until golden brown and crispy.
- Transfer to a plate, cut in half diagonally, and serve immediately.
