Ingredients
  

  • 1 whole chicken, cut into pieces
  • 500 ml chicken broth
  • 200 g smoked beef or bacon as a substitute
  • 2 units carrots, sliced
  • 2 units onions, thinly sliced
  • 2 cloves garlic, crushed
  • 200 g button mushrooms, sliced
  • 1 bouquet garni herbs like thyme, bay leaf, and parsley
  • to taste salt and pepper

Method
 

  1. Brown the chicken and smoked beef in a large pot over medium heat until golden brown.
  2. Remove the browned chicken and beef from the pot and set aside.
  3. Sauté the onions and carrots in the same pot until the onions are translucent and the carrots soften slightly.
  4. Pour in the chicken broth, scraping the bottom of the pot, and add the crushed garlic and bouquet garni. Season with salt and pepper.
  5. Cover the pot and let the stew simmer on low heat for about two hours.
  6. Add the sliced mushrooms about 30 minutes before the stew is finished cooking.
  7. Serve the hot stew over steamed or mashed potatoes, garnished with fresh parsley.
