  • 4 slices thick-cut bacon chopped
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic minced

  • 2 tablespoons olive oil
  • to garnish fresh parsley chopped (optional)

Method
 

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil. Cook the spaghetti until al dente, reserving about ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat, add chopped bacon and cook until crispy. Add minced garlic towards the end to infuse the oil.
  3. In a mixing bowl, whisk together eggs and grated Parmesan cheese, seasoning with black pepper.
  4. Toss drained spaghetti in the skillet with the bacon, remove from heat, and quickly pour in the egg-and-cheese mixture, stirring vigorously. Add reserved pasta water if the sauce is too thick and garnish with parsley.
