Ingredients
  

  • 250 g filet of cod
  • 60 g all-purpose flour
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, roughly chopped
  • 2 tbsp fresh parsley, chopped (about 8 g)
  • ½ tsp smoked sweet paprika
  • a pinch sea salt
  • a pinch black pepper

Method
 

  1. Soak the cod if it's salted, rinse under cold water, and pat dry before shredding into small flakes.
  2. In a mixing bowl, combine the flour, egg, chopped onion, garlic, parsley, paprika, salt, and pepper, mixing until smooth, then fold in the shredded cod.
  3. Heat olive oil in a skillet over medium heat and drop spoonfuls of batter into the pan, flattening them slightly. Fry for 3-4 minutes on each side until golden brown and crispy.
  4. In a small bowl, blend garlic, saffron, mayonnaise, lemon juice, olive oil, salt, and pepper to make the aioli; adjust seasoning, and let sit for 10 minutes before serving.
