Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp Cajun seasoning
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 4 tbsp butter, divided
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 cup chicken broth
  • 8 ounces cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 pound linguine pasta
  • to taste salt and pepper

Equipment

  • Large pot for boiling pasta
  • Colander for draining pasta
  • Large skillet for cooking chicken and making the sauce
  • Whisk for mixing the Alfredo sauce
  • Measuring cups and spoons

Method
 

  1. Bring a large pot of salted water to a boil, add linguine, and cook until al dente.
  2. Drain the pasta and set it aside.
  3. Toss the chicken pieces with Cajun seasoning, paprika, garlic powder, and black pepper.
  4. In a large skillet, melt 2 tablespoons butter over medium-high heat and cook the chicken for 6-8 minutes until golden brown and cooked through.
  5. Remove the chicken from the skillet and set it aside.
  6. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat, add minced garlic, and cook for 30 seconds until fragrant.
  7. Whisk in the flour until smooth, then gradually whisk in the milk and chicken broth, stirring to remove lumps.
  8. Bring the mixture to a simmer, then reduce heat to low and stir in cream cheese until melted and smooth.
  9. Add cheddar cheese and Parmesan cheese, stirring until creamy; season with salt and pepper to taste.
  10. Add the cooked chicken back into the Alfredo sauce and stir to coat.
  11. Toss in the cooked linguine until well coated with the sauce and serve immediately.
