Spicy Garlic Pasta

Ingredients
  

  • 1.5 lbs sirloin or ribeye steak, cut into bite-sized pieces
  • 12 oz pasta (penne, rigatoni, or linguine)
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 1 tsp crushed red pepper flakes (optional for extra heat)
  • to taste Salt and black pepper
  • 1.5 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella (for extra cheesiness)
  • to taste Salt and pepper
  • to taste Fresh parsley, chopped (for garnish)

Equipment

  • Large pot for boiling pasta
  • Large skillet for searing steak and making the sauce
  • Measuring spoons and cups
  • Whisk or spatula
  • Colander for draining pasta

Method
 

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
  2. Season the steak with Cajun seasoning, smoked paprika, salt, and pepper. In a skillet over medium-high heat, melt 2 tbsp of butter and sear the steak for 2-3 minutes per side until browned. Remove and set aside.
  3. In the same skillet, melt the remaining 2 tbsp of butter, add the minced garlic and crushed red pepper flakes, and cook for about 1 minute until fragrant.
  4. Lower the heat and pour in the heavy cream; let it simmer for 2-3 minutes. Stir in the Parmesan and mozzarella until melted and smooth. Adjust seasoning as needed.
  5. Add the cooked pasta and steak to the skillet and toss until everything is coated in the sauce.
