Ingredients
  

  • 1 lb sirloin or ribeye steak cubed
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 7 cloves garlic minced, divided
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • q.s. salt to taste
  • q.s. black pepper to taste
  • q.s. fresh parsley for garnish

  • Large cast-iron or heavy-bottomed skillet

Method
 

  1. Bring a large pot of salted water to a boil, add tortellini, and cook according to package directions. Drain and set aside.
  2. In a medium saucepan, melt 2 tbsp butter over medium heat, add 3 cloves minced garlic, then pour in heavy cream and milk, stirring until smooth. Reduce heat to low and gradually add cheddar and Parmesan, stirring until smooth.
  3. Pat steak cubes dry, season with Cajun seasoning, smoked paprika, salt, and black pepper. Heat a skillet over medium-high heat, add olive oil, then sear steak in batches without crowding.
  4. Reduce heat under the skillet, add 3 tbsp butter and the remaining minced garlic, and baste the steak with the garlic butter for 1-2 minutes.
  5. Plate the tortellini, top with steak tips, drizzle with garlic butter, and garnish with chopped parsley. Serve immediately.

Notes

Pat steak cubes dry for a better sear. Shred your own cheese for a smoother sauce. Adjust spice level according to preference by reducing or increasing Cajun seasoning and red pepper flakes. Don’t rinse the pasta after draining to keep the starch for better sauce adherence. Leftovers can be stored separately in the fridge and reheated gently.
