- In a medium bowl, whisk together all the ingredients for the spicy sauce: gochujang, gochugaru, soy sauce, honey, brown sugar, ketchup, sesame oil, and water until smooth.
- Heat the vegetable oil in a large skillet over medium heat. Add the chicken pieces, garlic, and ginger and cook for 5-7 minutes until the chicken is lightly golden and cooked through.
- Pour the prepared spicy sauce over the chicken and stir well to coat evenly. Let it simmer for about 10 minutes.
- Transfer the chicken to an oven-safe dish and sprinkle the shredded mozzarella over the top. Broil for 3-5 minutes until the cheese melts and turns golden.
- Remove from the oven and sprinkle with chopped green onions and toasted sesame seeds. Serve hot with steamed rice or noodles.
