Ingredients
  

  • 500 g chicken thighs or breasts cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • 1 tablespoon grated ginger
  • 3 tablespoons gochujang Korean chili paste
  • 2 tablespoons gochugaru Korean chili powder
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or rice syrup
  • 1 tablespoon brown sugar
  • 2 tablespoons ketchup
  • 1 teaspoon sesame oil
  • 120 ml water
  • 100 g shredded mozzarella cheese
  • chopped green onions for garnish
  • toasted sesame seeds for garnish

Method
 

  1. In a medium bowl, whisk together all the ingredients for the spicy sauce: gochujang, gochugaru, soy sauce, honey, brown sugar, ketchup, sesame oil, and water until smooth.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the chicken pieces, garlic, and ginger and cook for 5-7 minutes until the chicken is lightly golden and cooked through.
  3. Pour the prepared spicy sauce over the chicken and stir well to coat evenly. Let it simmer for about 10 minutes.
  4. Transfer the chicken to an oven-safe dish and sprinkle the shredded mozzarella over the top. Broil for 3-5 minutes until the cheese melts and turns golden.
  5. Remove from the oven and sprinkle with chopped green onions and toasted sesame seeds. Serve hot with steamed rice or noodles.
