Ingredients
  

  • 500 g chicken thighs or breast, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 3 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons gochugaru (Korean chili powder)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or rice syrup
  • 1 tablespoon brown sugar
  • 2 tablespoons ketchup
  • 1 teaspoon sesame oil
  • 120 ml water
  • 100 g shredded mozzarella cheese
  • chopped green onions
  • toasted sesame seeds

Method
 

  1. In a medium bowl, whisk together all the ingredients for the spicy sauce: gochujang, gochugaru, soy sauce, honey, brown sugar, ketchup, sesame oil, and water until smooth.
  2. Heat the vegetable oil in a large skillet over medium heat, then add the chicken pieces, minced garlic, and grated ginger. Cook for about 5–7 minutes until the chicken is lightly golden.
  3. Pour the prepared spicy sauce over the chicken and stir to coat evenly. Lower the heat and simmer for 10 minutes, allowing the sauce to thicken.
  4. Transfer the chicken mixture to an oven-safe dish or keep it in the skillet. Sprinkle the shredded mozzarella over the top and broil for 3–5 minutes until the cheese is bubbly and golden.
  5. Garnish with chopped green onions and toasted sesame seeds, and serve hot alongside rice or noodles.

Notes

Toasting the sesame seeds beforehand adds a wonderful nutty flavor. Adjust the amount of gochugaru to suit your spice preference. Leftovers can be stored in an airtight container in the fridge for up to 3 days; reheat gently in the microwave. For a healthier version, consider baking the chicken instead of frying.
