Ingredients
  

  • 3 cloves garlic
  • 2 shallots
  • 3 cm fresh ginger, grated (about)
  • 2 stalks lemongrass (tender parts) finely chopped
  • 3 red chilies (adjust based on spice tolerance)
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon shrimp paste (optional) or substitute with miso for vegetarians
  • 2 tablespoons vegetable oil
  • 400 ml coconut milk
  • 700 ml chicken or vegetable broth
  • 300 g cooked shrimp, chicken pieces, or tofu for vegetarians
  • 150 g cooked rice noodles
  • 100 g bean sprouts
  • 1 handful fresh cilantro leaves
  • 1 lime cut into wedges
  • 2 hard-boiled eggs halved (optional)

Method
 

  1. Make the Laksa Paste: Blend garlic, shallots, ginger, lemongrass, red chilies, turmeric, cumin, coriander, and shrimp paste until smooth.
  2. Sauté the Paste: Heat vegetable oil in a large pot, add laksa paste, and sauté for 3-5 minutes.
  3. Build the Broth: Stir in coconut milk and broth; let simmer for about 10 minutes.
  4. Add the Protein: Mix in cooked shrimp, chicken, or tofu; heat through for 5 minutes.
  5. Assemble and Garnish: Divide rice noodles into bowls, ladle soup over, and top with bean sprouts, cilantro, lime, and optional garnishes.
