Ingredients
  

  • 500 g ground lamb 10% fat
  • 1 unit red onion finely chopped
  • 2 cloves garlic crushed
  • 1 tsp ground cumin
  • 1 tsp paprika
  • q.s. salt and pepper to taste
  • 4 units tomatoes chopped
  • 2 tbsp apple cider vinegar
  • 2 tbsp powdered sugar
  • 1 clove garlic for the jam
  • 1 tsp mustard seeds
  • 1/2 tsp chili flakes adjust to taste
  • 200 g Greek yogurt
  • 1/2 unit cucumber grated and drained
  • 1/2 unit lemon juice of half
  • 4 units burger buns
  • q.s. lettuce leaves for topping
  • q.s. tomato slices for topping
  • q.s. red onion slices for topping

Method
 

  1. Combine chopped tomatoes, vinegar, sugar, garlic, mustard seeds, and chili flakes in a saucepan, bring to a bubble, then simmer for about 10 minutes to create the chili tomato jam.
  2. For the tzatziki, grate the cucumber and squeeze out excess water. Mix the thick Greek yogurt, cucumber, crushed garlic, and lemon juice, and season with salt and pepper.
  3. In a bowl, mix ground lamb with red onion, garlic, cumin, paprika, salt, and pepper, then form into 4 patties.
  4. Cook the lamb patties in a pan or on a grill for 5-6 minutes per side until browned and cooked through.
  5. Lightly toast the burger buns, then assemble by spreading tzatziki on the bottom bun, adding lettuce, a lamb patty, tomato, red onion, and a spoonful of chili tomato jam, and topping with the other bun.
