Ingredients
  

  • 450 g peeled and deveined shrimp
  • 250 ml white vinegar
  • 250 ml water
  • 120 ml olive oil
  • 2 cloves garlic, finely chopped
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 tablespoon red chili flakes
  • 1 tablespoon whole black peppercorns
  • 1 leaf bay leaf
  • ½ teaspoon mustard seeds
  • ½ teaspoon coriander seeds
  • 1 small onion, thinly sliced

  • Sterilized glass jar with a tight-fitting lid
  • Sharp knife for slicing onions
  • Wooden spoon for stirring

Method
 

  1. In a large pot, combine white vinegar, water, salt, sugar, garlic, red chili flakes, black peppercorns, bay leaf, mustard seeds, and coriander seeds. Bring to a boil over medium heat.
  2. Reduce heat to low and let simmer for 5 minutes.
  3. Add shrimp to the simmering marinade and watch them turn pink and opaque, usually taking 2-3 minutes.
  4. Remove pot from heat and allow shrimp to cool for 10 minutes.
  5. Layer sliced onion in a sterilized jar and pour shrimp and marinade over the onions, ensuring they are submerged.
  6. Seal the jar tightly and refrigerate for at least 24 hours.

Notes
