- In a large pot, combine the white vinegar, water, garlic, salt, sugar, red pepper flakes, black peppercorns, bay leaf, mustard seeds, and coriander seeds. Bring to a boil, then simmer for 5 minutes.
- Add the shrimp to the simmering brine and cook for 2–3 minutes until pink and opaque. Remove from heat and cool slightly.
- Place sliced onions in a sterilized jar, pour the shrimp and brine mixture over them, seal the jar tightly, and refrigerate for at least 24 hours.
