Ingredients
  

  • 450 g peeled and deveined shrimp
  • 250 ml white vinegar
  • 250 ml water
  • 120 ml olive oil
  • 2 cloves garlic minced
  • 1 tbsp salt
  • 1 tbsp sugar
  • 1 tbsp red pepper flakes
  • 1 tbsp black peppercorns
  • 1 bay leaf
  • 0.5 tsp mustard seeds
  • 0.5 tsp coriander seeds
  • 1 small onion thinly sliced

Method
 

  1. In a large pot, combine the white vinegar, water, garlic, salt, sugar, red pepper flakes, black peppercorns, bay leaf, mustard seeds, and coriander seeds. Bring to a boil, then simmer for 5 minutes.
  2. Add the shrimp to the simmering brine and cook for 2–3 minutes until pink and opaque. Remove from heat and cool slightly.
  3. Place sliced onions in a sterilized jar, pour the shrimp and brine mixture over them, seal the jar tightly, and refrigerate for at least 24 hours.
