Ingredients
  

  • 450 g shrimp, peeled and deveined
  • 250 ml white vinegar
  • 250 ml water
  • 120 ml olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 tablespoon red pepper flakes
  • 1 tablespoon whole black peppercorns
  • 1 leaf bay leaf
  • ½ teaspoon mustard seeds
  • ½ teaspoon coriander seeds
  • 1 small onion, thinly sliced

Method
 

  1. In a large pot, combine the white vinegar and water. Bring the mixture to a boil over medium-high heat.
  2. Reduce the heat to low, then add the minced garlic, salt, sugar, red pepper flakes, black peppercorns, bay leaf, mustard seeds, and coriander seeds.
  3. Let the spices simmer gently for 5 minutes.
  4. Carefully add the shrimp to the simmering marinade and cook until they turn pink (about 2 to 3 minutes).
  5. Remove the pot from heat and let it sit for 10 minutes.
  6. Layer the thinly sliced onion at the bottom of a glass jar, then pour the shrimp and marinade into the jar.
  7. Seal the jar tightly and refrigerate for at least 24 hours.
