- Clean the octopus and massage it with salt and vinegar to remove excess slime. Rinse under cold water and chop into bite-sized pieces.
- In a small bowl, whisk together gochujang, gochugaru, soy sauce, sugar, sesame oil, garlic, ginger, and mirin.
- Heat vegetable oil in a large skillet or wok over medium heat. Add onion, carrot, and cabbage. Stir-fry for 3-4 minutes.
- Add the octopus to the skillet and stir-fry quickly over high heat for 2-3 minutes.
- Pour the spicy sauce over the octopus and vegetables, stirring everything together. Cook for another minute.
- Toss in chopped green onions and transfer to a serving plate. Garnish with sesame seeds and serve immediately.
