Ingredients
  

  • 2 cups cooked spinach, squeezed dry
  • 15 oz ricotta cheese
  • 0.5 cups grated Parmesan cheese
  • 1 large egg
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 1 tablespoon tomato paste
  • to taste olive oil
  • a pinch sugar
  • to taste salt and pepper
  • optional fresh basil for sauce
  • to taste additional cheese for topping such as mozzarella

Method
 

  1. Heat olive oil in a skillet and sauté minced garlic until fragrant.
  2. Add crushed tomatoes and tomato paste, and season with sugar, salt, and pepper; let simmer.
  3. In a mixing bowl, combine squeezed spinach, ricotta cheese, grated Parmesan, and egg; season with salt and pepper.
  4. Mix the spinach mixture thoroughly to create the filling.
  5. Layer half the tomato sauce in a greased baking dish.
  6. Spoon dollops of the spinach and ricotta mixture over the sauce.
  7. Add the remaining tomato sauce on top.
  8. Optionally, sprinkle additional cheese over the top.
  9. Cover with foil and bake at 375°F (190°C) for 30 minutes; then uncover and bake for an additional 15 minutes until the cheese is bubbly and golden.
  10. Allow to rest for 10 minutes before serving.
