Steak Bites Rotini

Ingredients
  

  • 1 lb sirloin or ribeye steak cut into bite-sized cubes
  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 1 tbsp butter for searing steak
  • q.s. Salt to taste
  • q.s. black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 4 tbsp unsalted butter for sauce
  • 4 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 2 cups whole milk or half-and-half
  • 1 cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • q.s. red pepper flakes for heat (optional)
  • q.s. chopped fresh parsley for garnish (optional)

Equipment

  • Large pot for boiling pasta
  • Large skillet preferably not non-stick for best searing
  • Chef’s knife for cutting steak
  • Whisk for making sauce
  • Tongs or a large spoon for tossing

Method
 

  1. Fill a large pot with water, add salt, and bring to a rolling boil. Add rotini pasta and cook until al dente (about 9-11 minutes). Drain and set aside.
  2. Pat steak cubes dry with paper towels, and season with salt, black pepper, garlic powder, and Italian seasoning. Let sit for a minute.
  3. Heat a large skillet over medium-high heat, add olive oil and butter. When butter melts, add steak bites in a single layer and sear for 2-3 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, add 4 tablespoons of butter for the sauce, let it melt, and then add minced garlic. Cook for about a minute.
  5. Whisk in flour to the butter and garlic, cooking for a minute to form a roux. Gradually add milk while whisking, bringing to a gentle simmer and cooking for 4-5 minutes until thickened.
  6. Lower heat, stir in Parmesan and mozzarella cheeses until melted and smooth. Season with salt, pepper, and red pepper flakes if desired.
  7. Add cooked rotini and seared steak bites back into the skillet and toss to coat everything evenly. Heat together for a minute.
  8. Serve warm, garnished with fresh parsley and an extra sprinkle of Parmesan if desired.
