- Preheat your oven to 425°F (220°C).
- Heat a skillet over medium heat and cook the thinly sliced beef until browned.
- Add the sliced onions and green bell peppers to the skillet and stir until softened.
- Drizzle barbecue sauce over the beef and veggies; let simmer until the sauce thickens slightly.
- Lay four tortillas flat on a baking sheet, spoon beef mixture onto each, and top with shredded cheese. Cover with another tortilla.
- Bake for 10 minutes, then flip and bake for an additional 5 minutes until golden and cheese is melted.
