Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • a tiny pinch pinch salt

Equipment

  • Large mixing bowl
  • Sturdy whisk
  • Rubber spatula
  • Ice cream maker
  • Freezer-safe airtight container

Method

  1. In a large mixing bowl, combine heavy cream and whole milk until thick and luxurious.
  2. Add granulated sugar, vanilla extract, and salt; whisk for 2-3 minutes until sugar dissolves.
  3. Cover the bowl with plastic wrap and chill in the refrigerator for at least one hour (the longer, the better!).
  4. Once chilled, give the mixture a quick stir and pour it into the ice cream maker.
  5. Churn the mixture for about 20-25 minutes until it reaches a soft-serve consistency, adding any mix-ins in the last 2 minutes.
  6. Transfer the churned ice cream to a freezer-safe container, pressing parchment paper on the surface to prevent ice crystals.
  7. Freeze for 2-4 hours until firm.
  8. Before serving, let the ice cream sit at room temperature for 5-10 minutes to soften slightly.
