Ingredients
  

  • 2 pounds Chuck Steak or Sirloin Tips
  • 1 tablespoon Olive Oil
  • 1 unit Onion, sliced
  • 3 cloves Garlic, minced
  • 1 cup Beef Broth
  • 1/4 cup Worcestershire Sauce
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Smoked Paprika
  • Salt and Pepper to taste Salt and Pepper
  • 2 cups Baby Carrots
  • 4 medium Potatoes, quartered

Method
 

  1. Season the steak generously with salt, pepper, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat and sear the steak on both sides.
  3. In the slow cooker, layer sliced onions, minced garlic, and baby carrots.
  4. Place the seared steak on top, then pour in the beef broth and Worcestershire sauce.
  5. Sprinkle dried thyme over everything and add quartered potatoes around the edges.
  6. Cover the crockpot and set it to low for 6-8 hours or high for 4-5 hours.
  7. Once the steak is fork-tender, remove it from the crockpot and let it rest for 5 minutes.
  8. Skim any excess fat from the cooking liquid and spoon the sauce over the steak before serving.
