Ingredients
  

  • 1 pound flank steak
  • 4 slices bacon
  • 1 cup fresh spinach
  • 1 cup shredded provolone cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced

Method
 

  1. Lay the flank steak flat on a cutting board and pound it to about ½ inch thick.
  2. Season both sides with salt, pepper, and Italian seasoning.
  3. Spread fresh spinach evenly over the steak, leaving a small border around the edges.
  4. Sprinkle provolone cheese on top of the spinach and lay bacon strips across the surface.
  5. Roll the steak carefully from one end to the other, tucking in the filling.
  6. Secure the roll with butcher’s twine or toothpicks, then slice into 1-inch thick pinwheels.
  7. Cook the pinwheels in the oven at 400°F for 20-25 minutes, grilling for 4-5 minutes per side, or searing in a cast iron skillet until golden brown.
  8. Let the pinwheels rest for 5 minutes before serving.
