Ingredients
  

  • 1 can (20 oz) crushed pineapple, undrained
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsweetened shredded coconut
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 0.5 tsp salt
  • 0.5 cups butter, melted
  • 0.5 cups chopped walnuts or pecans (optional) optional
  • 0.5 tsp ground cinnamon
  • 0.25 cups brown sugar

  • Pitcher or mixing bowl with a spout
  • 9x13 inch baking dish
  • Electric hand mixer or stand mixer

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking dish with butter or non-stick spray and flour.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, coconut, baking soda, salt, and cinnamon.
  3. Add the crushed pineapple with its juice, eggs, melted butter, and vanilla extract to the dry ingredients and mix until well combined but not over-mixed.
  4. Pour the batter into the prepared pan and sprinkle brown sugar over the top.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake cools, prepare the frosting by beating together cream cheese and butter until smooth, then gradually add powdered sugar and vanilla until fluffy.
  7. Once the cake is cool, spread the frosting on top and garnish with toasted coconut and drained crushed pineapple.
