- Preheat your oven to 180°C (350°F).
- Bring a large pot of water to a boil and cook the pasta shells according to the package instructions (about 8-10 minutes), then drain and set aside.
- In a pan, heat olive oil and sauté the chopped onion and minced garlic until translucent, then add the fresh spinach and cook until wilted.
- In a mixing bowl, combine the ricotta, cooked spinach, grated parmesan, salt, and pepper, and mix until smooth.
- Stuff each pasta shell with the ricotta mixture and place them in a baking dish. Pour the tomato sauce over the shells.
- Sprinkle fresh basil leaves on top and bake for 25 minutes until golden and bubbly.
