Ingredients
  

  • 4 large bell peppers any color
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup shredded cheese cheddar or mozzarella work well
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper

Method
 

  1. Preheat your oven to 375°F (190°C). Wash the bell peppers and cut off their tops. Scoop out the seeds and membranes carefully.
  2. In a skillet, heat a drizzle of oil over medium heat. Add chopped onion and minced garlic. Cook until soft and fragrant—about 2 minutes.
  3. Add ground beef to the skillet. Break it apart with a spoon as it cooks. Stir frequently until fully browned. Drain excess fat.
  4. Mix in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Stir everything together until heated through.
  5. Fill each bell pepper generously with the beef mixture. Top with shredded cheese. Place in a baking dish and bake for 25-30 minutes.
