- Preheat your oven to 180°C (350°F).
- Wash the tomatoes and slice off the tops; scoop out the insides and place the pulp in a bowl.
- Lightly sprinkle the inside of the tomatoes with salt and let them drain upside down for 10 minutes.
- In a mixing bowl, combine the ground meat, chopped onion, garlic, breadcrumbs, egg, parsley, salt, pepper, and reserved tomato pulp.
- Fill each tomato with the meat mixture, pressing down gently, and replace the tops.
- Place the stuffed tomatoes in a baking dish and pour the broth into the bottom of the dish.
- Bake for 40–45 minutes, basting occasionally, until the tops are golden brown and the filling is fully cooked.
- Serve hot, garnished with extra parsley.
