  • 2 medium Sweet Potatoes thinly sliced
  • 1 can (15 oz) Black Beans drained and rinsed
  • 1 cup Shredded Cheese cheddar or Mexican blend
  • 1/2 cup Diced Tomatoes
  • 1/4 cup Chopped Red Onion
  • 1/4 cup Chopped Fresh Cilantro
  • 1/4 cup Sour Cream or Vegan Alternative
  • 1/4 cup Guacamole or Sliced Avocado
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • q.s. Olive Oil or Cooking Spray for baking
  • to taste Salt and Pepper

Method
 

  1. Slice the sweet potatoes into thin rounds and toss with olive oil, salt, pepper, chili powder, and cumin.
  2. Spread slices on a parchment-lined baking sheet and bake at 400°F (200°C) for 20 minutes, flipping halfway.
  3. Arrange the baked sweet potatoes on a fresh baking sheet or dish.
  4. Sprinkle shredded cheese over the potatoes, then add the black beans evenly.
  5. Return to the oven for 5-7 minutes until cheese is bubbly and golden.
  6. Top with diced tomatoes, red onion, cilantro, and add sour cream or guacamole.
  7. Serve immediately while warm and melty.
