  • 200 g Noodles (Fresh or Dried)
  • 1 tbsp Vegetable Oil
  • 2 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 1 cup Beef or Chicken Broth
  • 2 tbsp Soy Sauce
  • 1 tsp Chili Oil (optional)
  • 1 cup Bok Choy or Spinach
  • 1 hard-boiled egg Sliced
  • to taste Green Onions, chopped

Method
 

  1. Gather all ingredients and prepare them: chop garlic, grate ginger, and separate bok choy leaves.
  2. Boil water in a large pot and cook the noodles according to package instructions; drain and set aside.
  3. Heat vegetable oil in a pan over medium heat; add garlic and ginger, stirring until golden.
  4. Pour in the broth, soy sauce, and chili oil; let simmer for a couple of minutes.
  5. Add the cooked noodles to the pan with the sauce; toss gently to coat.
  6. Add bok choy or spinach and cook for another minute until wilted.
  7. Serve hot, topped with sliced egg and green onions.
