Ingredients
  

  • 1 filet filet mignon de porc
  • 100 g Boursin garlic and fine herbs cheese
  • 2 tbsp olive oil
  • to taste Salt and pepper
  • 1 tsp fresh thyme
  • 1 clove garlic, finely sliced
  • 150 ml chicken broth
  • to garnish fresh parsley

  • Large skillet
  • Meat thermometer
  • Wooden spoon

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat and sauté the finely sliced garlic until golden brown.
  3. Season the filet mignon with salt, pepper, and fresh thyme, then sear it in the skillet for about 4-5 minutes on all sides.
  4. Transfer the seared filet mignon to an oven-safe dish and spread the Boursin cheese generously over the top.
  5. Deglaze the skillet by pouring in the chicken broth and bringing it to a boil, scraping up any browned bits, then pour around the filet in the dish.
  6. Bake for 20 minutes or until the internal temperature reaches 65°C (150°F).
  7. Let the tender pork mignon rest for 5 minutes before slicing, then garnish with fresh parsley and serve.
