- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until golden brown.
- Add the pork mignon to the skillet and brown it on each side for about 3 minutes.
- Sprinkle the herbes de Provence, salt, and pepper over the pork. Remove the pork and place it in a baking dish.
- Spread a generous layer of Boursin cheese over the top of each pork mignon.
- Pour the crème fraîche around the pork in the baking dish.
- Place the baking dish in the preheated oven and cook for 20 minutes or until the pork is cooked through and the cheese is melted and golden.
