- Pat the chicken drumsticks dry with paper towels.
- In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
- Place the drumsticks in a large zip-top bag and pour the marinade over them; seal and squish to coat evenly.
- Marinate in the fridge for at least 2 hours, or overnight.
- Preheat the grill to medium-high heat (375°F to 400°F).
- Oil the grill grates to avoid sticking.
- Place the drumsticks on the cooler side of the grill, skin-side down, and close the lid; cook for about 20 minutes, flipping halfway.
- Move the drumsticks to the hotter side of the grill to crisp up the skin.
- Brush remaining marinade onto the drumsticks during the last few minutes of cooking.
- Check for doneness with a meat thermometer (internal temperature should reach 165°F).
- Once cooked, transfer to a platter and let rest for 5 minutes.
- Sprinkle with sesame seeds and chopped green onions; serve hot.
