Ingredients

  • 2 pounds top sirloin steak
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon Worcestershire sauce
  • 1 juice of 1 lemon

Equipment

  • Grill (charcoal or gas)
  • Meat thermometer
  • Tongs
  • Zip-top bag or container for marinating
  • Basting brush (optional)

Method

  1. Mix all marinade ingredients in a bowl and pour over the top sirloin steak in a large zip-top bag. Ensure the steak is fully coated and let it marinate in the fridge for at least 2 hours, preferably overnight.
  2. Preheat the grill to medium-high heat (around 400°F for gas or until coals are covered with white ash for charcoal).
  3. Grill the marinated top sirloin steak for about 4-5 minutes on each side, flipping only once for grill marks. Aim for an internal temperature of 135°F for medium-rare.
  4. Let the steak rest for 5 minutes before slicing to lock in the juices.

Notes

Don’t skip the resting time—it’s crucial for juicy steak. Use tongs instead of a fork to flip the steak; piercing it releases juices. Adjust seasoning based on personal preference, but don’t overdo the salt. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months. Reheat in a skillet to retain moisture. For a great presentation, serve sliced steak on a wooden board with fresh herbs and colorful sides. Enjoy!
