Ingredients
  

  • 200 g soft butter about ¾ cup + 2 tbsp
  • 100 g granulated sugar ½ cup
  • 100 g brown sugar ½ cup packed
  • 1 tsp vanilla extract
  • 4 large eggs
  • 150 g all-purpose flour 1 ¼ cups
  • 2.5 tsp cream of tartar baking powder
  • 50 g grated chocolate semi-sweet bar

Equipment

  • 9-inch springform or round cake pan
  • Parchment paper
  • Large mixing bowl
  • Wooden spoon or hand mixer
  • Spatula
  • Grater (for the chocolate)
  • Toothpick or cake tester

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform or round cake pan, lining the bottom with parchment paper.
  2. In a large mixing bowl, combine the soft butter, white sugar, and brown sugar using a wooden spoon or hand mixer until pale and fluffy.
  3. Crack the eggs into a small bowl and add the vanilla extract. Then, add the eggs one at a time to the butter mixture, mixing well after each addition.
  4. Sift the flour and baking powder over the wet batter and fold gently until just combined. Finally, fold in the grated chocolate.
  5. Pour the batter into the prepared pan and bake for 35-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
