Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 large egg
  • 2 tbsp milk
  • 1 cup packed brown sugar light or dark
  • 2 tbsp all-purpose flour
  • 2 tbsp light corn syrup
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chopped pecans optional

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. Cream softened butter and granulated sugar together until pale and fluffy.
  3. Gradually mix in flour until a soft dough forms, then press it firmly into the prepared pan.
  4. Bake the crust for 12-15 minutes until lightly golden around the edges.
  5. In a clean bowl, whisk together egg and milk, then add brown sugar, flour, corn syrup, melted butter, vanilla, and salt until smooth.
  6. Stir in pecans if using, then pour filling over the warm crust and spread evenly.
  7. Bake for another 20-25 minutes until the filling is set with a slight jiggle in the center.
  8. Let cool completely on a wire rack, then lift out using parchment paper and cut into squares.
