  • 900 g beef roast (shoulder or chuck)
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 500 ml beef broth
  • 1 can (400 g) crushed tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Method
 

  1. Heat olive oil in a large Dutch oven over medium-high heat and season the beef with salt and pepper.
  2. Sear the beef in hot oil until golden brown on all sides, then remove it and set aside.
  3. In the same pot, sauté chopped onions, carrots, celery, and garlic until softened, about 5 minutes.
  4. Return the beef to the pot and add beef broth, crushed tomatoes, rosemary, and thyme; bring to a boil.
  5. Reduce heat to low, cover, and let simmer gently for 3 to 4 hours until the beef is fork-tender.
  6. Shred the beef in the pot using two forks, mix with the sauce, and garnish with fresh parsley before serving.
