Ingredients
  

  • 2 cans black beans 14-ounce each, drained, rinsed, and patted dry
  • 1 tbsp extra virgin olive oil
  • 3/4 cup bell pepper finely chopped
  • 1 cup yellow onion finely chopped
  • 3 cloves garlic minced
  • 1.5 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.25 tsp smoked paprika
  • 0.5 cup bread crumbs or oat flour
  • 0.5 cup feta cheese skip if vegan
  • 2 large eggs see note for vegan substitution
  • 1 tbsp Worcestershire sauce see note for vegan version
  • 2 tbsp ketchup or mayo or BBQ sauce
  • a pinch salt
  • a pinch pepper

Equipment

  • Baking sheet
  • Parchment paper or silicone mat
  • Skillet
  • Large mixing bowl
  • Fork or potato masher

Method
 

  1. Preheat oven to 325°F and spread black beans on a lined baking sheet in a single layer.
  2. Bake beans for about 15 minutes to evaporate excess moisture.
  3. Heat olive oil in a skillet over medium heat; sauté bell pepper, onion, and garlic for 5-6 minutes until onions are translucent.
  4. Blot the sautéed mixture with a paper towel to remove excess liquid.
  5. In a large bowl, combine the warm sautéed veggies, spices, breadcrumbs, feta, eggs, Worcestershire, and chosen sauce.
  6. Add baked black beans and mash together with a fork or potato masher, leaving whole bean chunks.
  7. Scoop about 1/2 cup of the mixture to form patties, about 3/4-inch thick.
  8. Place patties on a parchment-lined sheet; bake at 375°F for 10 minutes per side or grill on aluminum foil over medium-high heat for 8 minutes per side.

Notes

For a vegan version, skip the feta and use a flax egg (1 Tbsp ground flax + 2.5 Tbsp water per egg). Ensure you let the mixture rest in the fridge for 5-10 minutes before forming patties for better consistency.
Store cooked burgers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
