Ingredients
  

  • 1 1/2 lb beef chuck, cubed 1-inch pieces
  • 1 large onion diced
  • 2 medium carrots cut into 1/2-inch pieces
  • 1 1/2 cups short-grain rice rinsed and well-drained
  • 1/2 cup tomato sauce or substitute with beef stock/water
  • 1 head garlic halved horizontally
  • 1 tsp black ground pepper
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 2 tsp salt
  • 1 1/2 cups beef broth or water
  • 1/4 cup chopped parsley for garnish
  • 2 tbsp oil for sautéing

Equipment

  • Instant Pot or electric pressure cooker
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Chef’s knife and cutting board
  • Fork for fluffing

Method
 

  1. Plug in the Instant Pot and set to 'Sauté' until hot. Add oil and diced onion, sautéing for about 5 minutes until soft and golden.
  2. Add carrot pieces and cubed beef, searing the meat for a few minutes. Stir in spices, tomato sauce, and beef broth, then add the bay leaf.
  3. Secure the lid, set the steam release valve to 'Sealing,' and pressure cook on High for 45 minutes.
  4. After cooking, carefully quick-release the pressure. Discard the bay leaf then sprinkle the rinsed rice evenly over the beef without stirring. Press the halved garlic into the rice.
  5. Seal the lid again and cook on High pressure for an additional 15 minutes.
  6. Allow the pressure to release naturally for 15-20 minutes, then open the lid and fluff the rice with a fork. Stir in chopped parsley before serving.
