- In a large stock pot, heat the olive oil over medium-high heat.
- Add the sliced carrots, chopped celery, and chopped onion; stir for 5-6 minutes until softened.
- Add the chicken stock, bay leaf, dried thyme, dried basil, and chopped parsley; bring to a boil.
- Reduce the heat, cover the pot, and simmer for 20-40 minutes.
- Add the uncooked egg noodles and shredded chicken; simmer for about 10 minutes until noodles are cooked.
- Remove the bay leaf and serve hot, garnished with fresh parsley.

Notes
For added flavor, roast the carrots and celery at 400°F (200°C) for 15-20 minutes before adding them to the pot.
If using rotisserie chicken, shred and add it when you include the noodles.
