Ingredients
  

  • 1 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • 1 teaspoon ground cinnamon

  • Hand mixer or sturdy wooden spoon
  • Baking sheets
  • Parchment paper or silicone baking mats
  • Wire cooling rack

Method
 

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine softened butter and cream cheese, and beat until smooth and fluffy.
  3. Add the egg yolk and vanilla extract to the mixture, blending well.
  4. In a separate bowl, whisk together flour, powdered sugar, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop tablespoon-sized portions of dough and roll into balls, placing them on the prepared baking sheets with space in between.
  7. Bake for 10-12 minutes until the edges are light golden brown and centers are soft.
  8. Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack.
  9. Dust cooled cookies with powdered sugar or cinnamon-sugar mix for a finishing touch.
