  • ½ cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup water or milk if preferred

Method
 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners. Lightly spray the liners with cooking spray.

  3. Add the sugar, oil, eggs, and vanilla extract to the dry ingredients. Stir gently until combined, then pour in the water (or milk) and mix until smooth.
  4. Scoop the batter into the prepared liners, filling each about two-thirds full. Bake for 18–20 minutes, or until a toothpick comes out clean.
  5. Let the cupcakes cool completely before frosting them.
