Ingredients
  

  • 4 cups cubed seedless watermelon
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 4 cups chilled sparkling water
  • 2 tablespoons honey or agave syrup optional
  • Ice cubes Ice cubes for serving

Method
 

  1. Blend the cubed watermelon until smooth.
  2. If desired, stir in honey or agave syrup for sweetness.
  3. Muddle the mint leaves in a large pitcher to release their oils.
  4. Pour the watermelon puree into the pitcher with the muddled mint and stir well. Refrigerate for at least 30 minutes.
  5. Before serving, pour in the chilled sparkling water and stir gently. Serve over ice cubes and garnish with extra mint leaves.

Notes
